Your Plates or Mine Christmas Cooking Show Showcasing Simply Joy Catering

Your Plates or Mine will air each Monday, Wednesday, & Friday at 7:30 p.m. through the month of December. BLC Channel 6 You can also see a clip on http://www.yourplatesormine.net It is also on You Tube.


These are 3 cakes that I chose that are "Easy, Quick, & Painless". As most of us just dont have the time to be the "Hostess With the Mostess", You CAN with these recipes. They are very easy. Prep time is minimal and all ingredients are easily found at the local grocery stores. Each recipe has a special meaning to me.

The Hershey's Fudge Cake was given to me by my dear friend Rachel. After eating it in her restaurant, and FELL IN LOVE with it....she gave me the recipe. It's my favorite Chocolate cake. I love to take it to family or church gatherings because it is so easy and can be carried in a 9 x 13" casserole dish with lid. It's a "True Chocolate Lovers" Cake.

Hershey’s Fudge Cake

1 c. self rising flour
1 c. sugar
1 stick butter
4 eggs
1 lg. can Hershey’s Syrup
1 tsp. vanilla
1 small pkg. mini marshmallows

Preheat oven @ 350*F. Mix all dry ingredients together then add the wet ingredients. Mix with mixer until completely blended. Bake in a
pre-greased 9 x 13 baking dish. Bake 45 minutes.


Icing

2 c. sugar
1 stick butter
½ c. milk
½ c. Hershey’s Cocoa

Mix all dry ingredients together in sauce pan then add wet ingredients. Mix well. Boil for 2 minutes, stirring continuously. Pour on top of hot cake. Can be served hot or room temperature.

The Banana Cake recipe was given to me by my friend/customer Lou Ann. She asked me to bake one for her from this special recipe and I have made one each year at Christmas ever since. If you like banana pudding, you will love this cake! It tastes just like an old fashioned Banana Pudding.


Banana Cake

Batter
*Ripe bananas, with brown speckles on the yellow peel, add the best flavor.

1 (16 oz.) package pound cake mix
3 large bananas, mashed
2 large eggs
1/3 c. milk

Beat all ingredients at low speed with electric mixer 30 seconds. Beat at medium speed 3 minutes. Use batter immediately.

Note: Pound Cake Mixes vary, I chose Betty Crocker Pound Cake Mix.

Buttercream Frosting

1 c. butter, softened
2 (16 oz.) packages powdered sugar
2/3 c. milk
1 Tbsp. vanilla extract

(Beat butter at medium speed with an electric mixer until creamy; gradually add powdered sugar alternately with milk, beating at low speed until blended after each addition. Stir in vanilla.)


Spoon Banana Cake Batter evenly into 3 greased and floured 8” round cake pans. Bake at 350*F for 20 to 22 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans; cool completely on wire racks. Cut off top of cakes so they will sit level. Cut bananas into ¼” thick slices; toss with lemon juice, and drain on paper towels. Place 1 cake layer on a serving plate; spread top evenly with ½ c. Buttercream Frosting. Arrange half of banana slices in a single layer over the frosting. Spread top of second cake layer evenly with ½ c. frosting, and invert, frosting side down , over the first layer, sandwiching the banana slices between the 2 frosted cake layers. Frost top and sides of cake with remaining frosting.

Keep refrigerated before and after serving.

This cake is very very very special to me. My friend Mona in Hawaii was very blessed by having such a wonderful Auntie B in her life. We got to meet Auntie B in 2006 and fell in love with her. She was up early every morning and made homemade bread, Homemade Passion Fruit Jelly, and Fresh Papaya cut for us to have for breakfast. Auntie B was all about traditions....Christmas Traditions and Chinese New Year Traditions as well. She was very passionate about making these Fruit Cakes. It is not your typical fruit cake that you see in the groceries this time of year. It is a cake very similar to a Coffee Cake. It is a wonderful cake to make to have with coffee for breakfast. They are really special Christmas gifts as well. Everytime I make one, I think of that sweet little lady who took so much time and love for her family and friends. Auntie B passed away just before Christmas last year. She has been truely missed. But her fabulous Fruit Cake has lived on.

Auntie B’s Fruit Cake From Hawaii

2 blocks butter
2 c. plain flour
1 c. sugar
1 tsp. baking powder
1 tsp. vanilla extract
4 eggs
1 fruit mix
1 c. chopped walnuts
1 c. raisins

Mix butter and sugar together until creamy smooth. Add eggs one at a time while mixing. Then add sifted flour and baking powder along with the nuts and raisins. Add your vanilla and then make sure all ingredients are mixed well together. Pour into greased and floured bread pan, half way baking, add fruits on top for decoration. Bake at 325*F for about 45 minutes to an hour.

Note: This not a typical fruit cake. It is similar to a Coffee Cake…Really great with coffee.
